Beta‑carotene is a lipophilic tetraterpenoid and provitamin A carotenoid. Its polyene conjugated double‑bond system enables two core physiological functions:

  1. Provitamin A activit

    In the intestinal mucosa and liver, beta‑carotene is oxidatively cleaved by β,β‑carotene 15,15′‑dioxygenase (BCMO1) to yield retinal, which is further reduced to retinol (vitamin A) or oxidized to retinoic acid. Conversion is downregulated by feedback inhibition when tissue vitamin A levels reach homeostasis, preventing hypervitaminosis A.

2.Antioxidant mechanism 

  Beta‑carotene acts as a physical quencher of singlet oxygen (¹O₂) with a rate constant of ~1×10⁹ M⁻¹s⁻¹ and scavenges lipid peroxyl radicals. It terminates chain reactions in lipid bilayers and low‑density lipoproteins, protecting membrane lipids, proteins, and DNA from oxidative damage.

3.Stability mechanism

    Microencapsulation forms a protective matrix barrier, reducing photodegradation and thermal oxidation. At 85°C for 30 min, color difference ΔE ≤1.2, supporting use in thermal processing.
